- 4 lemons (juice and zest)
- 2 cloves crushed garlic cloves
- 1 onion (diced)
- 4 Tbsps olive oil
- 16 ozs very fresh Tuna (thinly sliced)
- salt
- freshly ground Black pepper
- 9 ozs Glass noodles
- 2 Limes (juice)
- 1 Tbsp freshly grated ginger
- 3 Tbsps juilliened mint
- 2 Tbsps Bean sprout
- 1 Tbsp sweet Corn
- To garnish
- Basil
Preparation steps

Mix together the lemon juice, zest, onion, garlic and oil with the tuna slices. Season with salt and pepper. Cover and chill for 1 hour.

Pour boiling water over the noodles and leave to soak for 5 minutes.

Whisk together the lime juice, ginger and mint.
4.
Drain the noodles and toss with the dressing. Set aside for 10 minutes to allow the flavours to infuse. Add the beansprouts and sweetcorn and mix until well combined.
5.
Divide between 4 serving bowls and place the marinated tuna on top. Garnish with basil.
