- 2 ½ Tbsps butter
- 1 onion (finely chopped)
- 4 carrots (diced)
- salt
- freshly ground Black pepper
- 1 ⅛ cups cream (48% fat)
- ⅜ cup turkey stock
- 1 Tbsp freshly chopped thyme
- 4 cups Roast turkey (cut into 2cm chunks)
- For the mashed potato
- 8 cups potatoes (cut into chunks)
- 0.333 cup butter
- 3 Tbsps milk
- 1 egg yolk
- 1 pinch grated Nutmeg
- To garnish
- thyme
Preparation steps
1.
Heat the butter in a pan and add the onion and carrots. Season with salt and pepper and cook for 8-10 minutes until soft but not browned.

Add the cream, stock and thyme and bring almost to a boil. Reduce the heat and simmer for a few minutes to thicken.

Add the turkey and stir well. Divide between 4 ovenproof baking dishes.

Preheat the oven to 180°C (160° fan) 350°F gas 4.

For the mashed potato: put the potatoes in a pan and cover with cold water. Add a pinch of salt, cover and bring to a boil. Cook for 20- 25 minutes until tender.

Drain the potatoes and mash with the butter and milk and season with salt, pepper and nutmeg. Beat in the egg yolk.
7.
Spoon on top of the turkey and bake for 25-30 minutes until the potatoes are browned and the filling is piping hot.
8.
Garnish with thyme.
