- 300 grams Celery root
- 2 Tbsps lemon juice
- 250 grams Smoked ham (sliced)
- 100 grams Red paprika
- 100 grams Mascarpone
- 50 grams cream cheese
- 100 grams Pine nuts
- salt
- freshly ground peppers
- 1 pinch ground allspice
- 1 ⅕ kilograms Roast turkey roll
- 4 Tbsps clarified butter
- 200 milliliters chicken stock
Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse the celery root, peel and cut into very thin slices. Drizzle with the lemon juice. Cut the ham into strips. Rinse bell peppers, remove seeds and finely dice. Stir mascarpone with the cream cheese, bell peppers and pine nuts and season with salt, pepper and allspice.

Rinse the turkey breast, pat dry and season with salt and pepper. Spread with the cheese mixture and top with the ham and celery root slices. Roll tightly and tie with kitchen string.

Heat clarified butter in a roasting pan and sear the roast on all sides for 8-10 minutes. Then transfer to preheated oven, pour in chicken stock and roast 1.5-1.75 hours.

Remove from pan, arrange on a plate and slice.
