500 grams Turkey
20 grams ginger
1 shallot
6 Tbsps soy sauce
200 grams Udon Noodle
1 carrot (cut into matchsticks)
1 red Bell pepper (cut into matchsticks)
150 grams Cauliflower
chopped Savoy cabbage
4 vegetable oil
400 milliliters Vegetable broth
salt

Preparation steps

Rinse the turkey, pat dry and cut into strips. Place in a bowl. Peel and finely chop the ginger and shallot. In a bowl, whisk 4 tablespoons of soy sauce with the ginger and shallot. Pour over the turkey and marinate for 15 minutes. Prepare the udon noodles according to the package directions.

Heat the oil in a skillet. Add the turkey and cook for 4 minutes. Remove and set aside.

Add the carrots, bell peppers, cauliflower and cabbage to the skillet. Stir in the broth and remaining soy sauce, and season with salt and pepper to taste. Simmer for 5 minutes. 

Add the turkey and udon noodles to the skillet, and toss until heated through, about 2 minutes. Serve garnished with cashews.
