80 grams Peanut butter
100 milliliters Coconut milk
salt
cayenne pepper
400 grams Snow peas
400 grams Peas
2 scallions
500 grams turkey breasts
1 garlic clove
2 Tbsps olive oil
1 tsp Harissa (Spice mixture)

Preparation steps

Heat the peanut butter with the coconut milk and simmer until creamy. Season with salt and cayenne pepper.

Rinse the snow peas and the peas and blanch for 3-4 minutes in salted water. Drain. Rinse the scallions and cut into strips.

Rinse the turkey, pat dry and cut into thin strips. Peel, chop and finely grind the garlic with a pinch of salt. Stir in the oil and harissa and put under the turkey meat. Stir-fry in a hot nonstick skillet until golden brown, about 2-3 minutes. Add the snow peas, peas and scallions and fry for 1-2 minutes. Serve with the peanut sauce and sprinkled with harissa.
