1 loaf small Ciabatta (or rustic)
4 ripe Tomatoes (halved and seeded; cut into wedges)
1 Red onion (sliced)
20 fresh Basil
2 cloves garlic cloves (crushed)
½ cup extra virgin olive oil
2 Tbsps Red wine vinegar
salt (to taste)
freshly ground peppers (to taste)

Preparation steps

Preheat oven to 400 degrees F. Toast cubed bread in the oven for 10 minutes. Place toasted bread in a high-sided salad bowl. Add the tomato wedges, onion slices and basil.

Dressing: Crush the garlic in a mortar and pestle. Whisk the garlic, olive oil, and vinegar together. Pour over salad and season with salt and pepper. Let sit for 10 to 15 minutes (no longer as the bread will get soggy) before serving, so that the bread soaks up the dressing.
3.
Toss and divide between plates. Serve.
