2 Tbsps clarified butter
10 ozs Cherry tomatoes
1 Red onion
½ bunch Basil
7 ozs cooked potatoes
2 Tbsps White vinegar
5 Tbsps olive oil
salt
freshly ground peppers

Preparation steps

1.

Cut the bread into cubes and saute in hot clarified butter until golden brown. Place on paper towels.

2.

Rinse the tomatoes and cut in half if necessary. Peel the onion and cut into thin half-rings. Cut the potatoes into cubes.

3.

Mix the vinegar and oil, season with salt and pepper and mix with tomatoes, onions and potatoes. Fold in the bread cubes and serve garnished with basil leaves.
