- 4 large, baking potatoes
- 1 Tbsp Oil
- 2 mixed Fresh herbs e. g. chives, parsley, tarragon, basil, thyme, coriander (cilantro)
- 1 red chili pepper (seeds removed and finely chopped)
- 1 small lemon (juice)
- 1 cup butter
- salt
- freshly ground Black pepper
- To garnish
- cilantro
- toasted Pumpkin seed
- Chives
Preparation steps
Heat the oven to 400°F.
Prick the potatoes several times with a fork. Rub the oil over the potatoes, then wrap each potato in foil. Place directly on the shelf in the oven and bake for 1 1/4-1 1/2 hours, (depending on the size of the potato) until soft on the inside.
Place the herbs in a food processor with the lemon juice and butter and blend until combined. Put into a bowl and stir in the chopped chilies. Season to taste with salt and pepper.
