- For Almond Cookie Dough
- 1 ¼ cups all-purpose flour
- ½ cup powdered sugar
- ½ cup Almond flour
- ½ cup cold butter roughly chopped (1 stick)
- 1 egg (lightly beaten)
- 1 tsp pure Almond extract
- 1 Tbsp water
- In Addition
- 300 whole almonds (to decorate)
Preparation steps

In a large bowl, combine flour, sugar, and ground almonds together. Add the cold butter chunks, egg, almond extract and water. Chop with a knife until the mixture resembles breadcrumbs. Using clean hands quickly knead into a smooth dough. Cover with plastic wrap and chill for 2 hours.

Position oven rack to the middle position. Preheat oven to 350º F and line a baking sheet with parchment paper.

Roll dough out thinly between two sheets of plastic wrap. Cut out cookie rounds. Place on prepared baking sheet.
4.
Gently press almonds into cut cookies. Bake for about 8 to 10 minutes or until edges are nicely browned. Allow to cool for 5 minutes on baking tray and transfer to a wire rack to cool completely. Serve.
