2 cups fresh or frozen, sweet Corn kernel
1 small Red onion (peeled and finely chopped)
2 Tbsps seasoned Rice vinegar
1 Tbsp good-quality olive oil
2 Tbsps fresh Lime juice
¼ tsp Sea salt
½ tsp freshly ground Black pepper
2 cups cooked black beans (rinsed and drained)
2 cups cooked, red Kidney beans (rinsed and drained)
1 small, red Bell pepper (rinsed; seeded and finely chopped)
0.333 cup fresh cilantro (rinsed and finely chopped)

Preparation steps

1.
Bring a pot of water to a full boil. Add corn and blanch for 1 minute. Drain, rinse in cold water and drain again. Meanwhile, rinse onions in cold water; drain well and set aside.

In a large bowl, whisk together vinegar, olive oil, lime juice, salt and pepper. Add beans, corn, onion and bell pepper and gently toss until blended.
3.
Cover and chill for about 2 hours. Add cilantro and toss again just before serving.
