- 2 ½ tsps Baking powder
- ½ tsp baking soda
- 2 tsps ground cinnamon
- 2 cups grated Apple (mixed with 1 tbsp lemon juice)
- 1 cup Cranberry
- 1 egg
- ¾ cup sugar
- ⅜ cup sunflower oil
- 1 cup Buttermilk
Product recommendation
Don't over mix the dry and wet ingredients; stir until just combined and still lumpy to ensure the muffins are light.
Variations: use blueberries, walnuts, chocolate chips or raisins instead of cranberries.

1 Baking sheet, 1 Bowl, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Salad spinner
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in a 12 hole muffin tin.

Mix the flour, baking powder, bicarbonate of soda, cinnamon, apples and cranberries in a mixing bowl.
3.
Whisk together the egg, sugar, oil, vanilla and buttermilk and mix well.
4.
Stir into the dry ingredients and stir until just combined.
5.
Spoon the mixture into the paper cases and bake for 25-30 minutes until golden. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
6.
Sift over a little icing sugar just before serving.
