- For the cupcakes
- 2 cups all-purpose flour
- 1 Tbsp Baking powder
- ⅔ cup superfine caster sugar
- ½ cup unsalted butter (melted)
- 2 large eggs
- ⅞ cup milk
- 1 cup fresh Raspberries
- To decorate
- 1 ¼ cups red Sugar paste
- powdered sugar
- 3 Tbsps Apricot Jam (warmed)
- 1 cup white Sugar paste
- blue-green edible pearl dust
Preparation steps

For thecupcakes: heat the oven to 200°C (180° fan) 400°F gas 6. Place paper cases in a 12 hole muffin tin.

Sift the flour and baking powder into a mixing bowl. Add the sugar.

Whisk together the butter, eggs and milk. Pour into the dry ingredients and stir until just combined.

Stir in the raspberries.

Spoon the mixture into the paper cases and bake for 15-20 minutes until golden. Cool in the tin for a few minutes, then place on a wire rack to cool completely.

To decorate: roll out the red sugarpaste on a surface dusted with icing sugar. Cut out rounds slightly larger than the diameter of the cakes.
7.
Brush the tops of the cakes with a little apricot jam and attach the sugarpaste rounds.
8.
Roll out the white sugarpaste as before, about 3mm thick and cut out 12 strips for the ribbons (or use a ribbon cutter). Roll a stitch embossing wheel over the edges of the ribbons.
9.
Impress the raised side of letter stamps into the sugarpaste ribbons, using firm, even pressure.
10.
Brush the plain side of the ribbons with a little water and press onto the cakes.
11.
Using a fine brush, brush the pearlescent powder onto the embossed letters and leave to dry.
