This recipe is a very low-fat rice pudding with energy-giving carbohydrates and vitamin-rich fruit compote. One portion of rice pudding provides 25 percent of the daily requirement of bone-strengthening calcium. The apricots are a good source of vitamin A, which we need for a well-functioning visual process and for beautiful skin. Secondary plant substances contained in apricots protect our body cells from free radicals and can thus counteract the development of cancer cells.

Children love vanilla rice pudding with compote, but could be bothered by the thyme flavour in this dessert. Just test whether your child likes the combination of sweet and tart or not. To get more minerals and fibre, you can prepare the rice pudding with round grain natural rice. The vanilla rice pudding is suitable as a sweet lunch or as a light dessert (then the recipe is sufficient for 6 people). Try the dessert also with other fruits such as pears instead of apricots.

5 ozs Arborio rice
1 lb ripe Apricot
½ cup white Grape juice
2 sprigs thyme
2 heaping Tbsps Sea buckthorn (or pineapple juice)
4 Tbsps Agave syrup

1 Fine grater, 1 Cutting board, 1 Small knife, 1 Measuring cups, 2 Pots, 1 Wooden spoon

Preparation steps

Rinse orange with hot water, dry and finely zest.

Cut vanilla bean lengthwise and scrape out seeds. Add vanilla bean, seeds and milk to a pot and bring to a boil.

Stir in orange zest and rice. Cover and cook over low heat for 20-25 minutes, stirring frequently.

Meanwhile, rinse and halve apricots, remove pits and slice into wedges.

In another pot, bring grape juice and apricots to a boil, reduce heat to low and simmer 5-10 minutes.

Rinse thyme, shake dry and remove leaves from stems. Stir thyme leaves and sea buckthorn into apricot mixture. Remove from heat.

Sweeten rice pudding with agave syrup to taste and serve topped with apricot and sea buckthorn compote.
