Apples keep us healthy and fit. Pectin is responsible for this. The soluble dietary fibre from the apple skin is able to alleviate the symptoms of diarrhoea by protecting the intestinal wall and binding bacterial toxins. Apples also score points with quercetin. The flavonoid with its antioxidant potential protects our body cells from free radicals.
The vital substances pectin and quercetin are found especially in apple peel. You can skip the peeling and grate the apples gob instead. The vegan crumble can also be prepared in portions in glasses and is therefore a visual eye-catcher. The Apple Crumble goes well with a scoop of vanilla ice cream or a yoghurt sweetened with a little honey.

- 28 ozs Apple (e.g. Boskop)
- lemons
- 8 Tbsps coconut sugar
- 1 tsp Vanilla
- 4 ozs butter
- 6 ozs Pastry flour
- 3 ozs ground almonds
Preparation steps
Peel apples, cut into quarters, remove cores and cut flesh into small cubes. Squeeze lemon juice over them. Mix apple cubes with 2.5 tablespoons sugar, vanilla, and lemon juice. Grease a baking dish with 1 tablespoon butter and pour in the apple mixture.
Knead flour, almonds, remaining sugar and remaining butter together. Crumble between your palms and spread over apples.
Bake at 180 °C / 350 °F for 25-30 minutes. Remove, cool to lukewarm, and serve.
