- 2 ½ cups unsweetened Almond milk (plus extra to serve)
- ⅞ cup Coconut milk
- 2 Tbsps coconut sugar
- 2 cups rolled oats
- ⅔ cup dried Cherries
- 1 cup Blueberries
- 2 Tbsps Pecan (chopped)
- mint (to garnish)
Preparation steps

Combine the almond milk, coconut milk, and sugar in a saucepan. Warm over a moderate heat until boiling, stirring occasionally.

Add the oats, stir well, and return the mixture to a boil. Reduce to a gentle simmer, cooking and stirring frequently for 3 - 4 minutes until the oatmeal has thickened. Once thickened, stir through most of the cherries and some of the blueberries.

Divide the oatmeal between serving bowls. Top with the remaining blueberries, cherries, and the pecans.
4.
Serve with extra almond milk and a garnish of mint sprigs.
