300 grams short Pasta (such as small penne or Macceroni)
salt
1 shallot
1 garlic clove
2 red Bell pepper
200 grams Cherry tomatoes
¼ Cucumber
1 Tbsp finely chopped parsley
2 Tbsps white balsamic vinegar
4 Tbsps olive oil
freshly ground peppers
1 pinch sugar

Preparation steps

Cook the pasta in boiling salt water until al dente. Rinse with cold water and drain.

Peel and cube the shallot and garlic. Rinse, halve, remove the seeds and ribs and cube the peppers. Rinse and quarter the tomatoes. Rinse, peel, halve, remove the seeds and slice the cucumber.

Mix the pasta, vegetables and chopped parsley in a large bowl. Mix a vinaigrette with the vinegar and olive oil and season with salt, pepper and sugar. Pour the vinaigrette over the salad. Mix together well and let sit for 30 minutes. Season to taste and serve with a baguette.
