- ¼ cup sweet onions (finely chopped)
- 1 cup Millet
- 1 clove garlic cloves (minced)
- 3 ½ cups water
- kosher salt (to taste)
- 0.333 cup black Olives (pitted and chopped)
- 1 red Bell pepper (washed; seeded and finely diced)
- 0.333 cup Parmesan (grated)
- 1 ½ tsps fresh thyme (minced)
- 1 tsp fresh rosemary (finely chopped)
- 1 pinch Cumin
- freshly ground Black pepper (to taste)

Millet can be found in bulk bins at most supermarkets and natural-foods stores. Yield 2 cakes per serving.
Preparation steps

In a large saucepan, heat the oil over medium heat. Add the onion, and cook stirring, for about 4 minutes, or until softened. Stir in millet and garlic, stirring to coat, and cook for about 1 minute or until fragrant. Add water and salt; bring to a boil over medium heat. Reduce heat, cover and simmer for about 20 minutes, stirring occasionally. Stir in olives, bell pepper, Parmesan cheese, thyme, rosemary, and cumin. Season with salt and pepper to taste. Cook maintaining a simmer, uncovered, until the mixture is soft, thick and the liquid has been absorbed, about 10 minutes. Stir frequently, so the millet doesn't stick to the pan. Remove from heat, cover and let stand for 10 minutes. Uncover, stirring several times, let stand until cool enough to handle, about 20 to 30 minutes.

Dampen or rub hands with olive oil. Shape the millet mixture into 12 patties or cakes.

Coat a large non-stick skillet with cooking spray and heat over medium heat. Cooking in batches, add 4 millet cakes and cook until the bottoms are golden brown, about 3 to 5 minutes. Using a spatula, gently turn the cakes and cook until the other side is golden brown. Coat the pan again and cook remaining cakes; adjust heat if necessary to avoid burning. Serve and enjoy.
