Vegetable Salad with Chicken

- 500 grams Chicken breasts (ready to cook, skinless)
- 1 shallot
- 2 garlic cloves
- 2 centimeters fresh ginger
- 8 Tbsps lemon juice
- Corn oil
- 1 tsp Turmeric
- 2 tsps Garam Masala
- salt
- peppers (ground)
- 2 Zucchini
- 120 grams Cherry tomatoes
- 1 yellow onion
- 1 ½ yellow Bell pepper
- 150 grams Feta
- 100 grams Natural yogurt
- 1 tsp freshly chopped cilantro
- 1 tsp freshly chopped mint
- 200 grams mixed Lettuce
Preparation steps
Rinse the meat, pat dry and cut into narrow strips. Peel the shallot, the garlic and the ginger and chop finely.
Combine 5 tablespoons of lemon juice with 3 tablespoons oil, ginger, onion, turmeric, and garam masala, season with salt and pepper and marinate the meat for 1 hour.
Meanwhile rinse zucchini, trim and cut into thin slices. Rinse the tomatoes and cut into quarters. Peel the onion and cut into thin strips.
Rinse the peppers, cut in half, remove seeds and ribs and cut into narrow strips. Crumble the feta.
For the dressing combine the yogurt with the remaining lemon juice, 3 tablespoons of oil and the herbs. Season with salt and pepper.
Remove the meat from the marinade and cook in a hot frying pan. Remove and let cool to lukewarm.
Add the onion strips and the rest of the vegetables (except tomatoes) to the pan and sauté. Remove from heat and let cool to lukewarm. Rinse the lettuce, trim and spin dry. Tear into smaller pieces, toss with vegetables, meat, tomato, feta and dressing and serve in bowls.
