- For the sandwich
- 1 ripe Avocado
- 1 Tbsp lemon juice
- 60 grams lamb's lettuce
- 1 bunch Radish
- 1 red paprika
- 1 Whole-grain baguette (each about 40 cm long)
- 3 Tbsps olive oil
- salt
- freshly ground peppers
- 30 grams Onion sprouts
- If desired
- Fruit
Preparation steps

For the sandwich: Halve the avocado, remove core and slice into 2 mm (approximately 1/8 inch) thin slices. Drizzle with the lemon juice. Rinse the mache and spin dry. Rinse and trim the radishes, and thinly slice. Rinse the bell peppers, cut in half, remove seeds and white ribs, and cut into thin strips.

Cut the bread into 4 equal pieces. Top 2 of the slices with the vegetables. Drizzle with the olive oil and season with salt and pepper to taste. Top with the onion sprouts. Lay the other slices of bread on top. Serve with fruit salad if desired.
