450 grams Ground beef
6 Tbsps cooked Rice
1 tsp ground paprika
Nutmeg
salt
freshly ground pepper
2 Tbsps Pastry flour
800 milliliters water
2 cubes Beef broth
½ bunch scallions
2 yellow Bell pepper
3 carrots
4 ripe Tomatoes
parsley (finely chopped)
1 egg
lemons (juiced)

Preparation steps

Mix ground beef with rice and paprika and season with nutmeg, salt and pepper. Form small balls approximately 2.5 cm (1 inch) in diameter and roll in some flour.

Rinse and chop scallions. Rinse bell peppers, cut in half, remove seeds and cut into small pieces. Peel carrots and cut into slices. Rinse tomatoes, blanch, peel, halve and cut into small cubes.

Add water, bouillon cube, scallions, peppers, tomatoes and carrots to a pot. Bring to a boil, reduce heat, cover and simmer for approximately 30 minutes. Season with salt and pepper. Add meatballs and cook covered for another 20 minutes. Simmer until meat is cooked. In last 5 minutes, add parsley.

Mix egg with lemon juice just before serving. Add 2 tablespoons to hot soup and vigorously mix. Then add rest of mixture into pot and let soup thicken, stirring constantly. Season with salt and pepper and serve hot.
