1 onion
2 garlic cloves
1 Tbsp vegetable oil
1 ⅕ liters Vegetable broth
350 grams yellow Split pea
1 bay leaf
500 grams Brussels sprouts
200 grams starchy potatoes
1 Kohlrabi
150 grams Celery root
2 carrots
½ stalk Leeks
200 grams Smoked tofu
Lovage
1 Tbsp apple cider vinegar
salt
freshly ground peppers

Preparation steps

Peel and finely chop the onion and garlic. Heat the vegetable oil in a large pot and sauté the onion and garlic until softened. Deglaze with the vegetable broth and add the split peas and bay leaf to the pot. Cover and simmer for 45 minutes.

Meanwhile, rinse and halve the brussels sprouts. Peel and dice the potatoes, kohlrabi, celery root and carrots. Rinse the leek, cut in half lengthwise and slice thinly. Add the prepared vegetables to the pot and simmer for another 45 minutes.

Cut the smoked tofu into cubes and stir into the stew. Rinse the lovage, pat dry and cut the leaves into thin strips. Remove the bay leaf from the soup and season with apple cider vinegar, salt and pepper to taste. Ladle the stew into bowls and garnish with the lovage strips.
