3 Steak (from the loin, about 2 cm thick)
4 garlic cloves (thinly sliced)
4 carrots (cut into thin sticks)
1 handful soybean sprout
150 grams green Beans
1 small Chard leaf
200 grams button Mushroom (thinly sliced)
soy sauce
1 small red chili pepper (seeded and finely chopped)
sesame oil
salt
freshly ground peppers

Preparation steps

Cut the meat (widthwise) into thin slices. Mix with 2 tablespoons soy sauce and 2 tablespoons oil, then season with salt and pepper. Let marinate, preferably overnight.

Trim beans, rinse and blanch in boiling salted water for about 8 minutes. Drain. Rinse mangold leaves and cut the green in strips. Set most of the stems aside.

Heat 2 tablespoons oil in a wok and cook carrots, beans, mushrooms and garlic vigorously while stirring. Add chile. Push the vegetables aside some (upward), add the meat and sear. Mix meat and vegetables. Add mangold and bean sprouts and cook while stirring for about 1 minutes. Season with soy sauce, salt (salt carefully, because the soy sauce is already salty!) and pepper. Serve immediately.
