125 grams Grain mix (Rice, oats, barley, spelt, wild rice, wheat and rye in equal parts)
100 grams carrots
1 thin sprig Leeks
100 grams Celery
250 grams Green cabbage
2 Tbsps vegetable oil
freshly ground peppers
125 milliliters Vegetable broth
Nutmeg
40 grams pecorino romano
½ bunch parsley

Preparation steps

Boil 250 ml (approximately 1 cup) salted water, add the grains mixture, cover and simmer over low heat for 20 minutes. Meanwhile, peel the carrots, trim the leek, rinse both and julienne. Rinse the celery and cut into thin slices. Rinse the cabbage, remove the stalk and cut into very thin strips. In a large frying pan, heat the oil, sauté the vegetables for 3 minutes and season with salt and pepper.

Pour in the broth, cover and simmer over low heat for 10 minutes. Pour off the liquid from the grains, allow to drain briefly, add to the vegetables in the pan and continue to stir until the liquid is evaporated. Season with salt, pepper and nutmeg. Grate the Pecorino. Rinse the parsley, shake dry, chop the leaves and sprinkle with the grated Pecorino over the vegetable stir-fry.
