Vegetable Wheatberries with Grilled Sausages

- 250 grams Durum wheat
- salt
- 1 Eggplant
- 1 Zucchini
- 2 yellow Bell pepper
- 3 Tomatoes
- 1 shallot
- 1 garlic clove
- olive oil
- 75 milliliters dry white wine
- freshly ground peppers
- 16 small red grilled sausages
Preparation steps
Cook the wheatberries in boiling salted water according to package directions.
Rinse and peel the vegetables. Cut the eggplant and zucchini into bite-sized pieces. Cut the peppers in half, remove seeds and white membranes and cut into small pieces. Cut the tomatoes into quarters, remove the seeds and also cut into small pieces. Peel the shallot and garlic and cook in 2 tablespoons hot oil in a pan until tender. Add the vegetables, except for the tomatoes and cook until browned. Deglaze with the wine, add the tomatoes, season with salt and pepper and simmer gently for about 5 minutes.
Preheat the grill.
Cook the sausages on the hot grill until browned on all sides.
Mix the wheatberries with the vegetables, season with salt and pepper and serve on a warm plate with sausages.
