Ingredients

For the patties
3 shallots (chopped)
3 Tbsps clarified butter
150 Whole spelt seeds
500 milliliters Vegetable broth
1 carrot (coarsely grated)
1 bunch parsley
50 grams grated Gouda
1 egg
salt
freshly ground peppers

4 Hamburger bun
2 Tomatoes
1 onion
Lettuce
4 slices Cheese
Ketchup
Mayonnaise

Preparation steps

1.

Heat 1 tablespoon clarified butter in a skillet, add the shallots and saute until translucent. Add the cracked spelt and the carrot and sauté until the carrot is tender. Deglaze with the broth and cook over very low heat until the spelt is tender, about 10 minutes. Stir in the cheese, transfer to a bowl and let cool.

Stir in the chopped parsley and the egg and with moistened hands, shape the mixture into 4 patties. Heat the butter in a skillet and saute the patties until golden brown on both sides.

Rinse and slice the tomatoes.

Peel the onion and cut into rings.

Rinse the lettuce leaves and pat dry.

Split the hamburger buns horizontally. Spread  the mayonnaise on the bottom halves and top with the lettuce, patties, tomato, onion and cheese. Squirt with a little ketchup and top with the remaining half of the buns.
