8 small whole wheat pita bread (top sliced and opened)
¼ cup Mayonnaise
1 head Lettuce (rinsed; spun dry and roughly cut)
2 ripe Tomatoes (rinsed; trimmed and sliced)
½ english Cucumber (rinsed; trimmed and sliced)
¾ cup shredded Parmesan
½ tsp kosher salt
¼ tsp freshly ground Black pepper

Preparation steps

Preheat the oven to 300º F / 150º C.

Arrange the pita pockets on a baking sheet and bake for 5 to 7 minutes, or until warmed through.

Spread a light layer of mayonnaise in each pocket. Fill each pita pocket with lettuce, tomatoes, cucumber and Parmesan cheese. Season to taste with salt and pepper and serve.
