- ½ tin red Kidney beans
- 1 tin sweet Corn (small)
- 1 onion
- 1 clove garlic cloves
- ½ red pepper
- 1 Tomato
- 1 carrot
- ¼ cup vegetable stock (more if necessary)
- ½ red chili pepper
- salt
- peppers
- 1 Tbsp Oil
- 1 Tbsp parsley (finely chopped)
- 4 Tortillas (bought product)
Preparation steps

Drain the kidney beans and rinse under running water. Drain the sweetcorn. Peel and finely chop the onion and garlic. Wash, halve, core and finely dice the pepper. Drop the tomato into boiling water for a few seconds, then skin, halve, deseed and dice. Peel and thinly slice the carrot. Halve the chilli, remove the seeds and the white inner ribs and finely chop the flesh. Heat the oil in a frying pan and sweat the onion and garlic until translucent. Add the pepper and carrot and sweat briefly. Then add the stock, the rest of the vegetables and seasonings. Put a lid on the pan and cook for about 5 minutes. Check the seasoning.

Heat the tortillas in the oven and place a quarter of the filling on each tortilla. Fold in two opposite sides and roll up. Serve immediately.
