1 pinch salt
2 ¼ ozs soft butter (4 TBSP.)
5 ozs milk (whole)
3 ½ ozs apple sauce (unsweetened)
1 oz honey (3 TBSP.)
4 eggs
3 ¼ ozs Yogurt (low-fat)
½ Vanilla bean
9 ozs Crème fraiche
3 Passion fruit
1 oz Shelled pistachio (2 TBSP.)

2 Mixing bowls, 1 Hand mixer or whisk, 1 Knife, 1 Cutting board, 1 Waffle iron

Preparation steps

For the waffles, mix flour, baking powder and 1 pinch of salt. Cream 1 tablespoon butter, milk, applesauce, honey and eggs. Stir the flour mixture into the milk mixture. Let the dough swell for about 20 minutes.

Meanwhile, cut vanilla bean in half lengthwise and scrape out the pulp. Stir yogurt and Crème fraiche with vanilla pulp until smooth. Cut passion fruit in half and scrape out the seeds with the fruit pulp. Chop the pistachio kernels.

Heat the waffle iron and brush with a little butter. Pour in 2-3 tablespoons of batter per waffle and bake each one for about 3 minutes until golden brown. Keep the waffles warm in the preheated oven (80°C / 175˚F). Bake a total of 8 waffles.

4.

Drizzle the waffles with the yogurt mixture, spread passion fruit pulp on top, and sprinkle the chopped pistachios on top.
