Walnut Cake with Honey

- 70 grams raisins
- 70 milliliters Rum
- 300 grams Blossom honey
- 300 grams brown sugar
- 150 milliliters sunflower oil
- 90 grams Dark couverture chocolate
- salt
- ½ tsp Ground cinnamon
- ¼ tsp Ground clove
- 1 Tbsp Gingerbread spice
- 3 eggs
- 50 grams shelled Hazelnuts
- 50 grams shelled almonds
- 50 grams shelled Walnut
- 300 grams Pastry flour
- ½ packet Baking powder
- Fat (for greasing the pan)
- 3 Tbsps powdered sugar
- 1 tsp lemon juice
- 2 Tbsps milk
- 75 grams shelled Walnut (for garnish)
Preparation steps
Soak the raisins in rum. Preheat the oven to 180°C (approximately 350°F). Heat the honey, sugar, oil in a saucepan stirring constantly until the sugar dissolves. Remove from heat. Add chopped chocolate and allow to melt, stirring occasionally. Let cool.
In a bowl stir together melted chocolate, spices, eggs, nuts, raisins, and 2 tablespoons rum. Mix the flour with the baking powder and salt and add to the chocolate mixture until well combined. Spoon the mixture into a greased loaf pan and bake for 40-45 minutes.
Remove and let cool briefly in the pan. Unmold and let cool completely on a wire rack. To make the icing, combine the powdered sugar with the milk and lemon juice until smooth and creamy. Drizzle over the top of the cake. Top with walnut halves and let dry. Serve sliced.
