- 32 ozs potatoes (sliced)
- 1 Red onion (thickly sliced)
- 2 bay leaves
- 3 cloves garlic cloves (chopped)
- 12 coarse Pork sausage (thickly sliced)
- virgin olive oil
- balsamic vinegar
- salt
- freshly ground Black pepper
- 14 ozs red and yellow Tomatoes (quartered)
- To garnish
- flat-leaf parsley
Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5.
2.
Toss together the potatoes, onion, bay leaves, garlic and sausages, drizzling well with olive oil and vinegar. Season to taste with salt and black pepper.
3.
Put into a large baking dish or roasting tin and cook for 30 minutes. Remove from the oven, turn the ingredients over and add the tomatoes.
4.
Cook for a further 20-30 minutes until the potatoes are tender and golden and the sausages are cooked.
5.
Remove the bay leaves and serve garnished with parsley.
