- 3 Tbsps Pine nuts
- 14 ozs baby new Potato
- 4 Tbsps Pesto
- ½ Tbsp lemon juice
- ½ Tbsp extra virgin olive oil
- salt
- peppers
- 1 salad Cress
- ¼ cup shaved Parmesan
Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.

Put the pine nuts on the baking tray and toast for 5-8 minutes until golden. Set aside.
3.
Bring a large pan of salted water to a boil and add the potatoes. Cover and cook for about 15 minutes until tender.
4.
Drain the potatoes and while hot, stir in the pesto, lemon juice and oil. Mix well and season to taste with salt and pepper.
5.
Put into a serving bowl and scatter over the pine nuts, cress and parmesan shavings.
