100 grams oil-packed, sun-dried Tomatoes
1 garlic clove
4 Tbsps olive oil
2 Tbsps white balsamic vinegar
freshly ground peppers
60 grams freshly grated Parmesan

Preparation steps

1.

Rinse the beans and blanch in boiling salted water for 6-8 minutes, drain, rinse with cold water and drain well.

Trim the watercress. Rinse the cherry tomatoes and cut into small pieces. Drain the sun-dried tomatoes well and cut into strips. Peel the garlic and squeeze through a press. Mix with the beans, tomatoes, the sun-dried tomato strips, watercress, oil and vinegar and season with salt and pepper. Arrange on plates and serve sprinkled with freshly grated Parmesan. Serve with a fresh baguette.
