- 5 cups chilled Watermelon
- 6 Medjool Date (pitted and chopped)
- 2 Tbsps fresh Lime juice
- 2 Tbsps honey
- 0.333 cup shelled Pistachio (toasted and coarsely chopped)
- fresh mint (to garnish)
Preparation steps

In a large bowl, combine the watermelon balls and chopped dates. Combine the lime juice and honey in a small bowl; drizzle the lime juice mixture over the watermelon. Chill in the refrigerator for at least two hours.

Divide chilled melon among servings bowls. Sprinkle with toasted pistachios and garnish with fresh mint. Serve.
