- 2 Eggplant (diced)
- 2 red peppers (diced)
- 1 onion (diced)
- 1 clove garlic cloves (diced)
- 4 Tbsps olive oil
- dry white wine
- ground Saffron
- 4 Tomatoes (skinned and chopped)
- Chili powder
- 5 ½ cups Cod (skinned, ready-to-cook, cut into 8 pieces)
- 1 Tbsp fresh parsley (chopped)
Preparation steps
1.
Fry the aubergines, peppers, onion and garlic in hot oil for 2-3 minutes. Deglaze with a dash of wine, add a pinch of saffron and simmer until thick. Add the tomatoes and season with salt and chilli. Braise for around 8 minutes.

Add the fish to the vegetables, cover and cook for around 6 minutes on a medium heats. Season to taste and serve garnished with parsley.
