Preparation steps

1.

Rinse the lemon and lime and cut in half. Cut 1/2 into slices and the other half into quarters. Set the quarters aside for garnish. Stuff the fish with lemon and lime slices and 1/2 tablespoon of the garlic butter, then season with salt and pepper. Brush the dough sheets with oil and place on a work surface. Place the fish in the center and sprinkle with half of the almonds, 1 tablespoon bread crumbs and the pieces of butter. Season again with pepper. Pull the dough sheets up and over the fish, leaving the center slightly open. Tie the sides with kitchen twine to secure.

2.

Place on a baking sheet lined with parchment paper and bake in a preheated oven at 200°C (approximately 400°F) for about 20-30 minutes. If the pastry is browning too fast, cover with aluminum foil.

3.

Meanwhile, toast the remaining almonds until golden. Remove the fish from the oven, arrange on plates and garnish with almonds and lime and lemon wedges.

4.

Serve with a fresh salad.
