Whole Wheat Cucumber, Zucchini and Radish Sandwich

This sandwich is packed with fiber from the whole wheat bread and zucchini.
If you don't like radishes, you can replace them with red or green peppers.

- 4 slices Whole Wheat Bread (with sunflower seeds)
- ½ small Zucchini
- ½ small Daikon radish
- 0.333 Cucumber
- 2 Tbsps scallions
- 8 Chives
- peppers (freshly ground)
- 2 Tbsps White vinegar
- 2 tsps cream cheese
- salt
Preparation steps
Cut the wholemeal bread diagonally in half. Coat one half thinly with cream cheese.
Rinse the radish, peel, cut into slices and season with salt. Rinse the zucchini, cut into 8 slices, and cut the rest of the zucchini lengthwise into thin ribbons. Rinse and cut the cucumber into slices. Season the cucumber and zucchini with pepper.
Place the bread half without the cream cheese on four small plates and top with cucumber slices, chopped chives and drizzle with a little white wine vinegar. Then place the radish slices over, cover with 2 zucchini slices, again drizzle some white wine vinegar and sprinkle the chives over. Close the sandwich with the bread half coated with cream cheese (cheese side down).
Thread the zucchini ribbons on wooden skewers and insert in the wholemeal sandwich. Serve garnished with whole chives.
