Ingredients

1 ¼ cups Whole wheat flour
½ cup rolled Oats
1 ½ cups Buttermilk
2 ½ Tbsps instant Yeast
1 Tbsp honey
½ cup Sour cream (low-fat)
2 tsps salt
1 generous pinch Anise seed
½ tsp Caraway
2 Tbsps Oats (to sprinkle)

Preparation steps

1.

In a large mixing bowl combine yeast, honey, buttermilk (warmed slighlty), and 1 cup of the flour. Mix together untill flour and yeast disolve into the buttermilk. Then cover bowl with a towl or plastic wrap and let it rest for about 1 hour. This is now your "sponge" and after an hour you schould see some bubbles on the top from the yeast activit.

Add the sour cream, the remaining flour, salt, rolled oats and spices and knead until a smooth dough forms. Cover and let it rise in a warm area for about 1-3 hours or until double in size.

preheat oven at 200°C/ 400°F. Line a baking sheet with parchment paper. On a floured surface shape the dough into a loaf (or a round) and place ontop of parment. Brush with warm water and sprinkle with oatmeal.Score the top with a sharp knife to allow gas to escape during baking.

Place bread into the oven and then sprits the oven with water using a sprits bottle. (this will help make the bread form a crust.) Bake for 50 to 60 minutes.
