4 Tbsps vegetable oil

Preparation steps

Rinse steaks and pat dry. Peel onions and coarsely chop. Rinse and peel carrot and chop coarsely. Cut mushrooms into quarters. Combine red wine, thyme, onion, mushrooms, carrot pieces and 4 tablespoons of oil in a pot and place in a dish or bag with steaks. Infuse overnight in the marinade.

The next day, remove meat, pat dry, flatten slightly and season with salt and pepper. Pour marinade through a sieve. Heat butter and oil in a pan and fry steaks on both sides for 4 minutes. Wrap in aluminum foil and let rest for 10 minutes. To make gravy, pour marinade in a saucepan and simmer over high heat. Place steaks again briefly in the pan and serve with sauce on plates.

Serve, as desired with chestnuts and wide noodles.
