This delicious rice salad is packed with fiber as well as protein and calcium from the feta. 

If you like, you can also use fresh vegetables instead of jarred peppers and tomatoes.

9 ozs Wild rice
salt
1 bunch scallions
7 ozs Feta
4 ozs pickled, red peppers (in oil)
4 ozs sun-dried Tomatoes (in oil)
1 tsp freshly chopped Basil
1 tsp freshly chopped oregano
1 Tbsp White vinegar
peppers (freshly ground)

Preparation steps

1.

Cook rice in 2 cups of salted boiling water on medium heat.

Rinse scallion, shake dry and cut into thin rings. Cut feta cheese into cubes.

3.

Remove cooked rice from heat, place in a bowl, break up with a fork and allow to cool. Drain pickled peppers and sun-dried tomatoes and cut into strips. Combine rice, feta cheese, peppers and tomatoes. Make a dressing by combining vinegar, salt and pepper. Toss salad with dressing. Sprinkle with scallion, basil and oregano. Place salad in small bowls and serve.
