- 4 oven-ready Partridges
- 4 Tbsps olive oil
- 1.333 cups white wine
- ⅔ cup honey
- 2 onions (peeled and sliced into thick slices)
- 4 Pear (peeled)
- 2 cups Pomegranate seed
Preparation steps

Heat the oven to 200ºC (180º fan) 400ºF, gas 6.

Rub the partridges inside and out with the oil, season with salt and pepper and place in roasting pan. Roast in the oven for 20 minutes.
3.
Heat the wine and honey in a small pan. Remove the partridges from the oven and add the wine/honey mixture.
4.
Add the onions and pears, baste them and the partridges with the pan juices and return to the oven for 20 minutes, basting once more during cooking.
5.
Let the partridges rest for 10 minutes then serve with the pomegranate seeds sprinkled over.
