- 2 Tbsps powdered sugar
- 1 cup Rose wine
- ½ cup clear Apple juice
- 1 pc Organic lemon zest
- 1 Cinnamon stick
- 1 stick Lemongrass (approx. 5 cm)
- 4 Peaches (not to ripe/soft, peeled)
- 1 cup Raspberries
- 4 Basil
Preparation steps

Caramelise the sugar in a small pot and quench with the wine and the juice and simmer for a few minutes. Add the lemon zest, cinnamon stick and the lemongrass, cover and simmer for 5 min.

Add the peaches and cook for around 5-8 min depending on how big they are. Leave to cool.
3.
Arrange the raspberries in bowls along with one peach and some of the poaching juice - remove the spices first. Garnish each bowl with a basil leaf.
