300 grams Wonton wrapper (frozen, about 48 dough slices)
1 pc ginger (walnut large)
½ bunch chinese Chives
2 garlic cloves
400 grams mixed Ground meat
salt
peppers (freshly ground)
2 Tbsps Rice wine
1 Tbsp sesame oil
2 eggs
1 ½ liters Chicken broth
2 tsps Light soy sauce
2 tsps Rice vinegar
2 tsps Szechuan pepper (freshly ground)
½ bunch scallions

Preparation steps

1.

Thaw the wonton dough, gently disengage and adjacent spread to kitchen towels.

2.

Peel and chop the ginger and garlic.

3.

Mix ground meat with ginger, salt, pepper, rice wine, sesame oil and eggs.

4.

Pipette a portion of filling on the center of a disc of dough, brush the rim of the dough with water, fold the dough over the flling and press down well, so a small sack forms.

5.

Rinse and cut scallions into rings.

6.

Bring chicken broth to a boil. Drop the filled wontons in and cook open until dumplings rise and with the scallions and allow to simmer for 2 minutes.

7.

In the meantime set soup bowls out. In each bowl pour 1/2 teaspoon light soy sauce and vinegar, 1/4 teaspoon garlic and 1/2 teaspoon sichuan pepper.

8.

Skimmer out the wontons and place into the bowl, add a little soup, garnish with chives and serve.
