Elderflowers are commonly known as a medicinal plant that can help treat many ailments. It helps with sicknesses like the common cold as well as other, more serious conditions like diabetes. These scones are lower in fat and calories than typical pastries because of the use of yogurt.
Serve these at tea or brunch along with some berry jam!

- For the scones
- 1 ½ cups all-purpose flour
- 1 tsp Baking powder
- 1 tsp sugar
- ½ tsp salt
- ¼ cup softened butter
- ⅔ cup Yogurt
- flour (for working the dough)
- 1 egg yolk (beaten)
- To serve
- ⅞ cup double cream
- 2 Tbsps Vanilla sugar
- 1 Tbsp Elderflower liqueur
Preparation steps

Heat the oven to 425°F, and line a baking tray with grease-proof paper.

Knead the flour with the baking powder, sugar, salt, butter and enough yogurt for the dough to be smooth and easy to knead.
Roll out on a floured surface to a thickness of 1" and cut into approx. 12 equal-sized triangles.

Transfer to the baking tray, brush with beaten egg yolk and bake in the oven for approx. 15 minutes until golden. Transfer to a cooling rack.
4.
Whip the cream to soft peaks with the vanilla sugar and the syrup. Serve the scones warm or cold, as desired, with the cream.
