- 2 organic lemons
- 1 ⅔ cups all-purpose flour
- 3 tsps Baking powder
- 1 tsp vanilla extract
- 1 pinch salt
- ½ cup soft butter
- ⅞ cup sugar
- 2 medium eggs
- 1 ⅛ cups natural Yogurt (3.5 % fat content)
Preparation steps

Heat the oven to 180C (160C fan) 375F, gas 5.

Place the paper baking cups in the muffin pan. Grate the zest and squeeze the juice of one lemon. Cut zest strips (using a zester) from the second lemon and squeeze the juice. Reserve the strips for decoration.

Mix the flour, baking powder, vanilla extract, grated lemon zest and salt in a mixing bowl. Beat the butter and sugar in another bowl until creamy. Beat in the lemon juice, eggs and yoghurt. Pour the egg mixture into the dry ingredients and beat quickly until the dry ingredients are moist. Spoon the dough into the paper cups.

Bake on the middle shelf for 20-25 minutes until golden brown. Take out of the pan and place on a wire rack to cool.
5.
To serve: decorate with strips of lemon zest.
