This quick noodle soup is bursting with flavor but relatively low in calories, coming in at just under 300 per serving.

- ½ cup Peanut butter
- 2 Tbsps dark soy sauce
- 2 Tbsps Lime juice
- 1 Tbsp light brown sugar
- 1 Tbsp sesame oil
- 1 spaghetti Squash (halved, peeled, with seeds removed)
- 2 carrots (peeled and julienned)
- 2 scallions (finely sliced)
- 2 Tbsps Peanuts (crushed)
- cilantro (to garnish)
Preparation steps

Mix together the peanut butter, soy sauce, lime juice, sugar, sesame oil, and two tablespoons of warm water in a large microwaveable jug. Microwave on high for 1 minute, and then remove and stir well.

Cut the squash into portions and pass through a spiraliser, collecting the strands in a bowl of cold water.

Rinse the squash well and then drain and pat dry. Toss with the peanut sauce in the jug. Divide between four microwaveable mugs, cover with clingfilm, and cook on high in the microwave for 3 - 4 minutes.

Carefully remove from the microwave and leave to stand briefly before removing the clingfilm. Stir briefly before garnishing with the carrots, spring onion, peanuts, and coriander.
