600 grams ground almonds
1 Organic orange (zested)
175 grams sugar

2 Tbsps Shredded coconut

Preparation steps

For the almond milk, add the ground almonds to a large bowl with the orange zest, cover with about 1 1/2 liters (approximately 6 1/3 cups) of water and soak for 2 hours.

Strain the liquid 2-3 times over a fine sieve into a second bowl. Finally, strain through cheesecloth or linen towel-lined strainer. Dissolve the sugar in the milk. For the garnish, mix cocoa with the coconut. Immerse rims of glasses in water and dip in cocoa-coconut mixture to coat.

Fill glasses with the almond milk and sprinkle a little of the cocoa-coconut mixture over the top. Crush pistachios and sprinkle over each serving as a garnish.
