- 2 ½ cups flour
- 2 tsps Baking powder
- ¼ cup butter
- 2 eggs
- 3 Tbsps honey
- ⅔ cup Yogurt
- ⅜ cup Sour cream
- ⅔ cup Almond flour

This muffin mixture can be varied by using chocolate chips or cocoa powder.
Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and place paper cases in a muffin tin.
2.
Mix together the flour and the baking powder; melt the butter and it leave to cool slightly.
3.
Mix together the eggs, honey, yogurt and the sour cream and stir in the melted butter. Then quickly stir in the flour and the almonds until a smooth dough is formed.
4.
Fill the muffin cases with the mixture and bake for 30 minutes until golden brown. Remove from the oven and leave to cool.
