Ingredients

For the batter
2 centimeters fresh ginger
200 grams softened butter
100 grams honey
4 eggs
100 grams ground almonds
1 tsp ground Vanilla
1 tsp ground cinnamon
1 pinch ground cloves
1 pinch Cardamom
300 grams Pastry flour
1 packet Baking powder
2 Tbsps Spiced rum
200 milliliters milk
Fat (and breadcrumbs for the pan)
For the glaze
150 grams powdered sugar
3 Tbsps Orange juice
2 Tbsps Orange liqueur (such as Grand Marnier)
75 grams slivered almonds

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Peel the ginger and grate finely. Whip the butter, honey and eggs until fluffy. Stir in the ground almonds, vanilla, cinnamon, cloves, ginger and cardamom. Stir in the flour and baking powder then the rum and milk.

Grease the loaf pan and sprinkle with breadcrumbs, fill with the batter, smooth the surface and bake for 40 minutes. Remove and let rest briefly in the pan. Invert onto a wire rack to cool completely.

For the glaze: Stir the powdered sugar, orange juice and orange liqueur together. Spread over the cake to glaze and sprinkle with sliced almonds. Let dry before serving.
