2 eggs
1 pinch salt
100 grams Pastry flour
1 tsp heaping Baking powder
160 milliliters lowfat milk
2 tsps Canola oil (or ghee)
125 grams Blueberries
also
100 grams Bacon
4 eggs

Preparation steps

1.

Separate the egg for pancakes. Whip the egg white with a pinch of salt until stiff. Mix together flour, baking powder, egg yolk and milk and fold in the egg whites.

In a pan, heat the oil or ghee. Rinse the blueberries and pat dry. Pour about 2 tablespoons of batter into the pan and sprinkle a few blueberries on it. Bake until the underside is browned, then flip. In this way, cook all the pancakes. Keep the finished pancakes warm in the oven heated to 80°C (approximately 175°F).

In a second pan, fry the bacon until browned and crispy. Remove from pan and keep warm in the oven also. In bacon grease, fry the four eggs and season with salt and pepper. Slice the orange and cut into wedges.

On each plate, arrange a few pancakes with a fried egg and some strips of bacon. Garnish with orange slices. Serve immediately with maple syrup.
