3 ½ ozs Shredded coconut
4 ozs whole spelt flour
2 ¾ ozs Raw cane sugar
4 ¼ ozs butter
4 Tbsps Maple syrup
1 tsp baking soda
3 ½ ozs Dark chocolate (min. 70% cocoa content)

Preparation steps

Mix oats with coconut flakes, flour and sugar in a bowl. Melt butter over low heat with 2 tablespoons maple syrup, baking soda and 2-3 tablespoons water. Pour into the dry ingredients and mix until well formed, adding a little more water or flour as needed.

Using a spoon, remove a little of the mixture at a time, shape into small balls and flatten slightly. Place on a baking tray lined with baking paper, spacing them apart. Bake in a preheated oven at 180 °C / 350 °F for about 20 minutes until golden brown. Carefully remove the Anzac Biscuits from the baking tray and allow to cool completely on a cooling rack.

Coarsely chop chocolate, melt over a hot water bath and pipe in lines over biscuits, drizzle with remaining maple syrup, and let Anzac Biscuits dry thoroughly.
